Stir fried lotus

This one time when I was at my sister's house (Queen L) for dinner, she made stir fried lotus for dinner.  I didn't know what was a lotus until I ate it.  I like it very much because of the taste and the texture.  So, thank you sister for dinner.

Ingredients:
Serving 2
-1/2 lbs pork thinly slice
-about 2 oz ginger thinly slice (shredded)
-2 cloves garlic thinly slice
-about 12 to 16 oz lotus slice and let it sit in water
-1/2 Tsp salt
-1/2 Tsp sugar

Instruction:

A wok on high heat, add in cooking oil, garlic, pinch of salt to bring out the flavor and stir for 20 seconds.  Add in pork, ginger, salt, sugar and stir until the pork is cooked.  Give the lotus a quick drain then add it in the wok and stir for about 3 to 5 minutes until cooked.

Crispy Egg Noodles with Mixed Vegetables (Mi Xao Don)

Serving 2

Ingredients:
-Cauliflower (steamed)
-Sugar snap peas (steamed)
-Carrots (steamed)
-Water chestnuts
-Baby corn
-1/2 medium onion
-2 cloves garlic minched
-salt
-about 3 to 4 oz of shrimps
-about 3 to 4 oz of shrimp balls cut in half
-2 cups of fresh chow mein egg noodles
Instructions:

1) To prepare the sauce, mix 1 cup chicken broth, ½ Tsp sugar, 1TBS Starch, 1Tsp soy sauce, 1Tsp oyster sauce, and ¼ Tsp black pepper in a bowl.

2) Deep fry the chow mein noodle and place it in a large dish. 
3) Add cooking oil, onion, and garlic in a wok and stir for 20 seconds on high heat.  Add shrimp, shrimp balls and a pinch of salt.  Stir until the shrimps are cooked and add cauliflower, sugar snap peas, carrots, water chestnuts and baby corn.  Stir for 1 minute and pour in the prepared sauce.  Turn off the heat when sauce thickens.


4) Pour the contents of the wok on top of the fried noodles.

I used udon noodle in my version. Happy eating!!

Super Bowl XLV

Chicken Wings:
1. Mix eggs, tempura flour, black pepper, paprika, and garlic powder into a bowl. (Mix batter)
2. Throw some crushed tortilla chips and bread crumb into a bowl.
3. Dip the chicken wings in the batter then in the crumbs.
4. Set your fryer to 325 degrees and fry the wings for about 3 to 4 minutes until they are fully cooked.

My special dipping sauce contains 3 drops of "Death sauce"...900 times hotter than a Jalapeno!
1. 1oz ketchup, 1oz bbq sauce, 1oz honey, 1oz mayo and 3 drops of Death sauce into a dipping bowl.

Pasta Fajioli with some tamarind powder.

Swai Fillet with a touch of Cumin

1. Slice some red onion and chopped garlic. Put it in the pan with some extra virgin olive oil in high heat.
2. Throw in 1 or 2 Swai fillet and season with sea salt, black pepper, and sprinkle some cumin.
3. Sear both side for 2 to 3 minutes until cooked.
4. Chop up some fresh parsley and sprinkle it on the Swai.
 I served my fish with flat bread, your choice of cheese, your choice of roasted hummus, and my homemade sauerkraut.

Fried Banana Ice Cream

Fast and easy:

1. Mash a banana into a bowl and let it sit in the freezer for about 10 minutes.
2. Pour some tempura flour and bread crumbs into a small bowl.
3. Roll the banana into balls or whatever shape you prefer. Then dip it in the tempura flour and bread crumbs mixture.
4. Set the cooking oil on high heat and fry it for about 30 to 60 seconds until brown.
5. Serve it with your choice of ice cream.  Drizzle some fudge and caramel  on top and sprinkle some nuts.
